Looking for a cozy, old-fashioned dessert that tastes like childhood? These delicate crepes filled with sweet cottage cheese were a staple at my grandmother’s house — and yes, she baked them in a traditional oven. The best part? There’s no flour at all.
Cottage Cheese Crepes (No-Flour Nalisniki)
Ingredients:
-
6 eggs
-
500 ml milk (room temperature)
-
5–6 tbsp starch (potato or cornstarch)
-
1 tbsp vegetable oil + extra for greasing
-
300 g cottage cheese
-
Sugar to taste
-
Sour cream to taste
-
Butter to taste
Instructions:
-
In a mixing bowl, beat 5 eggs with sugar until light and fluffy.
-
Gradually add the starch while continuing to mix, ensuring a smooth consistency.
-
Pour in the milk and add the vegetable oil. Stir well to avoid lumps and let the batter rest for 15 minutes.
-
Lightly grease a frying pan with oil and pour in a small amount of batter. Tilt the pan to spread it evenly. Fry the crepes on one side only, then stack them on a plate.
-
For the filling, mix the cottage cheese with sugar and 1 egg. Optional: add poppy seeds or raisins. Stir until smooth.
-
Place a spoonful of filling on each crepe, roll them into envelopes or logs, and arrange them in a baking dish or clay pot.
-
Spread each layer with sour cream and melted butter.
-
Bake in a preheated oven at 180°C (350°F) for 10–15 minutes.
-
Let the crepes cool slightly before serving.
They’re soft, rich, and full of comforting flavor — just like grandma used to make. 🍽️💛
