Cottage Cheese Crepes (No-Flour Nalisniki)

Ingredients:

  • 6 eggs

  • 500 ml milk (room temperature)

  • 5–6 tbsp starch (potato or cornstarch)

  • 1 tbsp vegetable oil + extra for greasing

  • 300 g cottage cheese

  • Sugar to taste

  • Sour cream to taste

  • Butter to taste

Instructions:

  1. In a mixing bowl, beat 5 eggs with sugar until light and fluffy.

  2. Gradually add the starch while continuing to mix, ensuring a smooth consistency.

  3. Pour in the milk and add the vegetable oil. Stir well to avoid lumps and let the batter rest for 15 minutes.

  4. Lightly grease a frying pan with oil and pour in a small amount of batter. Tilt the pan to spread it evenly. Fry the crepes on one side only, then stack them on a plate.

  5. For the filling, mix the cottage cheese with sugar and 1 egg. Optional: add poppy seeds or raisins. Stir until smooth.

  6. Place a spoonful of filling on each crepe, roll them into envelopes or logs, and arrange them in a baking dish or clay pot.
