Would you believe that this stunning cake requires no baking at all? That’s right—no oven, no complicated steps, just a few simple ingredients and a bit of patience. With the perfect combination of crunchy nuts, soft prunes, and a creamy filling, this dessert is bound to impress. Best of all, it’s easy to make and requires minimal effort!

Ingredients (Makes 4 Servings)

Prunes – 200g

Walnuts – 150g

Sour cream (medium fat) – 500g

Powdered sugar – 50g

Vanilla sugar – 10g

Milk – 100ml

Biscuits (such as Jubilee or tea biscuits) – 300g

Step-by-Step Preparation

Prepare the Prunes

Pour hot water over the prunes and let them soak for about 10 minutes to soften. After they’ve absorbed the liquid, drain them and dice into small pieces.

Make the Creamy Filling

In a bowl, whisk together sour cream, powdered sugar, and vanilla sugar until the mixture becomes light and fluffy. This will serve as the delicious binding layer for your cake.

Assemble the Cake

Line a cake mold or a deep dish with cling film, ensuring it covers the bottom and sides. Lightly spread a layer of the prepared cream over the film.

Dip each biscuit into the milk for a second or two (don’t oversoak them, just enough to soften slightly). Place them evenly at the base of the mold.

Spread a layer of the sour cream mixture over the biscuits.

Sprinkle chopped prunes and walnuts evenly on top.

Repeat the process—biscuits, cream, prunes, and nuts—until all the ingredients are used up. The final layer should be the creamy mixture to seal everything together.

Chill and Serve

Cover the cake with cling film and place it in the refrigerator for at least 2 hours (or overnight for the best results). Once set, carefully remove it from the mold, peel off the cling film, and decorate it however you like—perhaps with extra nuts, crumbled chocolate or a dusting of fine cocoa.
